WHAT TO EAT

Guided by Executive Chef Andrew Riccatelli, the New York menu features modern takes on dishes from the robata grill, fresh sashimi, finely curated maki rolls, and Thai-inspired curries, among other signature and new dishes including A5 Miyazaki wagyu ribeye with crispy rice, soy emulsion, and garlic chips, and whole roasted cauliflower with black bean-chili oil, peanut and mint.

Essence

EspadinThe Essence is a lighter stirred drink, celebrating the more delicate sides of mezcal. Pairing El Silencio’s 86-proof espadin with a French wine-based aperitif like Lillet, proves how elegant mezcal can be.

.5 oz. Dry Vermouth

.5 oz. Lillet

.75 oz. Lemon Juice

.5 oz. Agave

3 Dashes of Orange Bitters

METHOD

Stir ingredients in a cocktail shaker.

Pour in a rocks glass.

Garnish with a dehydrated blood orange slice.

Enjoy!
